Vegetable yaki udon soup is a warm and comfort side dish for dinner or night snack. It is made with fresh udon noodle and flavored in vegetarian stock soup. Give it a try, it would warm your stomach.
1 block udon noodle
4-5cups vegetable stock
1/4 tsp salt, for taste
Ground white pepper for taste
3 stalks green onions
5 stalks coriander
In a soup pot, add enough water and heat to a boeil. Add udon noodle, cook briefly until soft.
Remove with strainer, cool under running water if desired. Drain thoroughly and set aside.
Wipe out the soup pot, add the vegetable stock, bring into a boil at high heat. Then turn down.
Add together the noodles. Continue cook briefly until well mixed with soup.
Mix in salt, ground pepper and green onions. whisk around completely.
Turn off heat. Garnish the vegetable yaki udon soup recipe with coriander. Serve.
