5 oz. lo mein (soft egg noodle)
1 big tomato
2 big eggs
1 green chili
2 tsp Asian light soy sauce
1/2 tbsp yellow soybean pate
1/2 tsp sugar
1/3 tsp salt
1 tbsp hot water
1/2 tsp sesame oil
Peanut oil for frying
1 tbsp green onions
Slice cross-wise on top of tomato and soak in hot water for 10 minutes for this lo mein recipe.
Peel the skin of tomato and then slice diagonally in a plate into pieces, don’t waste any liquid.
Slice red pepper into half, remove the seeds, rinse and then slice diagonally into small pieces.
In a pot, add enough boiling water, dash of salt and oil. Add noodles and cook for 2 minutes.
When egg noodles is tender, remove and cool under cold running water, then mix with sesame oil.
Beat the egg with well with dash oil and then scramble in wok with dash of oil, separate into pieces.
Reheat wok hot at medium-high heat, add tomato and green onion, stir fry until juicy.
Stir in sauce ingredients and add together the egg, simmer briefly until well cooked.
Pour the tomato and egg mixture on the top of lo mein noodles, serve immediately.
