Cold sesame noodles is a local particular snacks in Shanxi of China. It is prepared with rice flour, mixed with vegetable in savory sauces.
300g flour(middle gluten)
1 tsp baking soda
1 tbsp vinegar
1/2 tsp salt
5 cloves garlic
1 tsp chili oil
1 tbsp sesame oil
Mix flour with some water, forming a dough (not to soft and hard). Let is set for 1 hour.
Add water in container, wash flour dough until water turns white in order to wash away starch, leaving gluten only.
Add baking soda, roll well with dough. Then steamed for 15 minutes. Removed, cooled and cut into small pieces, set aside.
Let starch liquid set for 5 hour, pour water above, reserve the thickness things only.
Prepared a bowl, brush oil around it. Whisk starch liquid well, add some in the bowl, and steam in hot water for 5 minutes.
Replaced and cool the bowl in cold water until you could take the noodle skin off from the bowl. Repeat the process until all starch liquid was finished.

Slice the noodles into strips, place in serving plate.
Mix sauces in a bowl well.
Cut cucumber and carrot into strips, well mix with gluten pieces and noodles strips.
Pour sauces mixture. Well tossed and serve!
